原料

  • 4 西北樱桃,去核并切半

  • Combine cherries, water, lavender and sugar in a small saucepan.  Heat mixture until it barely begins to boil.  Remove from heat and allow mixture to cool completely.  Strain and reserve liquid.  For each drink, combine 4 ounces cherry-lavender mixture, 1½ ounces vodka and 4 ounces crushed ice in a tall 12-ounce cocktail glass and top with club soda.  Garnish with a cherry with stem and a sprig of lavender blossoms.
    Variation:  For a delicious cherry martini, shake or stir strained cherry-lavender mixture, vodka and ice together.  Strain into an 8-ounce martini glass, top with soda and garnish with a cherry with stem and a sprig of lavender blossoms.
    Tips:Recipe may be doubled.Pitted frozen sweet cherries may be substituted when fresh cherries are not in season.Cherry-lavender mixture may be stored in the refrigerator for a week.

Cherry Bounce

Ingredients

  • 2 lbs Bing Cherries
  • 1/2 cup sugar
  • 750 ml Rye Whiskey, Vodka, Rum or Brandy
  • zest of 1 lemon

Instructions

  • Wash cherries, remove stems.
  • Pierce each cherry a couple times with a toothpick or cocktail skewer.
  • Pack cherries into 1/2 gallon or 2 quart jars. Divide sugar and lemon zest between jars.
  • Top with 750ml of liquor.
  • Cap, shake to dissolve sugar (you may need to shake a few times a day until sugar isdissolved).
  • Place jars in a dark, cool pantry for 6mos.
  • After opening place cherry bounce in refrigerator.

Cherry + Tarragon Limeade

Ingredients

  • 1 1/2 oz tarragon simple syrup recipe below
  • 1 1/2 oz lime juice
  • 5 pitted cherries
  • soda water
  • ice

Instructions

  • Fill a pint glass halfway with ice. Add 3 cherries and, using a wooden muddle, crush cherries to break apart and release juices. Add tarragon syrup, lime juice and stir. Fill pint glass to the top with ice and fill to top with soda water. Skewer remaining 2 cherries and place on top as garnish with a sprig of tarragon.

Notes

Tarragon simple syrup
Makes: 3 ounces
2 ½ ounces sugar
2 ½ ounces water
3 fat branch fresh tarragon
zest of ½ orange, zested on a microplane
In a small saucepan warm sugar and water, stir to fully dissolve sugar. Do not boil. When small bubbles start to form, add tarragon and orange. Remove from heat and cool. When cool, remove tarragon from syrup.

Cherry Margarita

  • 1 cup Northwest Cherries, pitted and halved
  • 1/4 cup tequila
  • 2 tbsp fresh lime juice
  • 2 tbsp sugar
  • 2 tbsp orange liquer
  • 2 cups crushed ice divided
  • lime juice
  • kosher salt
  • 2 Northwest Cherries with Stems

Instructions

  • Combine cherries, tequila, lime juice, sugar, orange liqueur and 1 cup crushed or cubed ice in a container.  Either Shake and serve on the rocks or Blend until mixture becomes slushy.
    Dip the rims of 12-ounce cocktail glasses in lime juice then dip in salt.  Pour cherry mixture into glass.  Garnish each with a cherry with stem.

Cherry Ginger Shrub

Ingredients

  • 7 cups cherries de-stemmed, pitted and halved
  • 7 cups white sugar
  • 4 tbsp ginger root peeled and minced
  • 5 cups apple cider vinegar
  • 2 cups water

Instructions

  • Mix the cherries and granulated sugar in a large bowl. Stir well.
  • Cover with plastic wrap and place in the fridge for 1-2 days, stirring every 12 hours.
  • Blend all liquid and cherries in a blender. Strain the liquid/syrup using a fine mesh strainer.
  • Add ginger syrup. (Optional see below).
  • Mix the syrup with vinegar and pour into jars and refrigerate.
  • Use shrub immediately, or wait a couple weeks until the flavors deepen, meld, and harmonize.

Notes

Ginger Syrup
1. Combine 2 cups white sugar, 2 cups water in a medium size pot. Warm until sugar has dissolved (about 5
minutes). Add ginger and cook for an additional 5 minutes. Remove from heat, cover, and let steep for 30
minutes. Strain liquid.

Cherry Lemon Cooler

Ingredients

  • 3 cups water
  • 1 cup sugar
  • 1 cup Northwest Cherries, halved and pitted
  • 1 cup fresh lemon juice, refridgerated
  • crushed ice
  • 1 liter club soda or seltzer
  • Northwest Fresh Cherries with Stems
  • 4 stems fresh mint

Instructions

  • Combine water and sugar in small saucepan; add halved cherries. Bring mixture to boil; reduce heat and simmer 5 minutes. Remove from heat and cool to room temperature. Strain syrup into container with tight fitting lid; discard cherries. Refrigerate syrup until cold. Fill a tall 12 to 16-ounce glass with ice. Pour 1/4 cup lemon juice and 1/3 cup syrup over ice and top with club soda. Garnish with cherries and mint. Makes 4 servings.
    Tip: Leftover syrup may be stored, refrigerated, up to one week.

Chocolate Cherry Smoothie

Ingredients

  • 2 cups Northwest Cherries - Fresh or Frozen
  • 1 cup unsweetened Almond Milk or any milk of your choice
  • 2 tbsp raw cacao powder cocoa powder is ok too
  • 1 tbsp chia seeds
  • 1 scoop protein powder (plain, vanilla, or chocolate) or greek yogurt (plain or vanilla)
  • Ice if not using frozen cherries

Instructions

  • Blend together in blender until smooth.
